CRP alumna Emily Arasim Beltrán’s master’s research was recently featured in Edible New Mexico magazine. “The Power & Possibility of Our Rural Grocery Stores” offers a snapshot of her research of the value of rural grocery stores to Northern New Mexico communities. She has created a handbook that includes historic documentation, analysis of the pressures and changes impacting these vital spaces, and strategies to support their resurgence.
